2 pounds sweet potatoes (6 servings)

1 teaspoon Kosher salt

1/4 teaspoon pepper

2 tablespoons grapeseed oil

5 tablespoons unsalted butter

1 onion, finely chopped

1 clove garlic, finely chopped

1 1-inch piece fresh ginger, peeled and chopped

1 small carrot, finely chopped

2 1/2 tablespoons Japanese curry powder

2 1/2 cups chicken stock

1/2 small russet potato, cut into 1/4-inch dice

1/2 small ripe mango, cut into 1/2-inch dice

6 canned chestnuts

3 tablespoons chestnut liquid (from the can)

salt to taste

1 1/2 tablespoons sugar

2 bulbs fresh myoga, very thinly sliced (for garnish)

4 leaves fresh shiso, very thinly sliced (for garnish)
