½ cup of lentils

½ cup dried chickpeas

2 tablespoons olive oil, divided in half

1 1/2 cups onion, chopped

5 garlic cloves, minced

1 tablespoon tomato paste

½ teaspoon ground red pepper

½ teaspoon ground cinnamon

1 ½ teaspoons ground cumin

¼ teaspoon ground turmeric

1 teaspoon kosher salt

2 ½ cups fat-free, lower-sodium vegetable broth

½ cup water

1 (28-ounce) can of whole, crushed tomatoes, not drained

2 cups butternut squash, chopped and peeled

2 cups pumpkin, chopped and peeled

6 cups cooked quinoa
