Ingredients

750 g red plums

60 g (1/2 cup ) flour

5 ml (1 tsp) baking powder

85 ml (1/3 cup) caster sugar

3 extra large eggs, beaten

500 ml (2 cups) full cream milk

1 vanilla bean, scraped or use 2,5ml (1/2 tsp) vanilla extract

Icing sugar

Whipped cream for serving

Preparation

1.

Lightly grease a shallow 1 litre ovenproof by rubbing with butter.

Arrange the plums, cut side down in the dish then sift together the flour, baking powder and caster sugar in a bowl.

Combine the eggs, milk and vanilla seeds or extract and lightly whisk.

4.

Make a well in the dry ingredients and add the egg and milk mixture.

5.

Mix to a smooth batter but don’t mix too much as you don’t want to create air bubbles in the mixture.

6.

Pour the batter gently over the fruit – it helps if poured over the back of a metal spoon and bake in a hot oven of 200 degrees C for about 30-40 minutes.

7.

Remove from the oven and cool slightly.

8.

Sprinkle with icing sugar and serve hot with whipped cream – or custard – or vanilla ice cream.
