I serve these to vegetarian clients with a roasted red pepper sauce. They are terrific. Recipe makes a ton.

These are great and tasty. Adding fresh herbs ramps up the flavor. If you add more to it it gets even better

Came out a bit bland and onion too overpowering, will reduce the onion next time.

Oh, I also choose to bake them in the oven as opposed to frying just to make it a little healthier.

It was so good that my toddler ate it without complaint and my carnivore husband didn't complain about missing meat! I added mozzerella and old white cheddar cheese, and rice crispies instead of bread crumbs.

2 1/2 cups/12 oz/340 g cooked quinoa, at room temperature

4 large eggs, beaten

1/2 teaspoon fine-grain sea salt

1/3 cup/.5 oz /15 g finely chopped fresh chives

1 yellow or white onion, finely chopped

1/3 cup/.5 oz/15 g freshly grated Parmesan or Gruyère cheese

3 cloves garlic, finely chopped

1 cup/3.5 oz /100 g whole grain bread crumbs, plus more if needed

Water, if needed

1 tablespoon extra-virgin olive oil or clarified butter
