1 teaspoon fennel seed , slightly crushed

salt and black pepper (to taste)

1 lb yukon gold potato , unpeeled and thinly sliced

1 teaspoon olive oil

1 large leek

2 tablespoons Pernod (anisette liquor) or white wine

1 tablespoon olive oil

1 lemon , thinly sliced

1 medium fennel bulb , cored and thinly sliced or 4 stalks celery , thinly sliced
