1 medium baking potato , peeled and quartered (about 9 ounces)

2 tablespoons fresh rosemary leaves (I usually omit)

1/2 cup flour

2 tablespoons extra-virgin olive oil

3 cups unbleached all-purpose flour

Dough

Starter

1 1/4 teaspoons salt

1/2 cup warm water , 105-115 degrees

1 1/2 teaspoons fast rising yeast

1/2 cup water

3/4 teaspoon coarse sea salt (or 1-1/4 teaspoons kosher salt)
