2 tablespoons extra virgin olive oil (EVOO)

1 bay leaf, fresh or dried

1 medium onion, chopped

1/4 zucchini, diced

1/4 yellow squash, diced

Salt and pepper

1/2 cup canned pumpkin

4 cups chicken or vegetable broth

1 1/2 teaspoons ground cumin (1/2 palmful)

1 teaspoon coriander seeds (1/3 palmful)

2 1/4 cups couscous

1 vine-ripe plum tomato, seeded and finely chopped

1 tablespoon cilantro, chopped

1 tablespoon flat leaf parsley, chopped

Mediterranean flat bread, for passing
