  • 3 ozs bean thread noodles
  • 1 lb flank steak, cut across the grain into 1/4"-thick strips
  • 2 Tbsps reducedsodium soy sauce
  • 2 Tbsps dry sherry (optional), divided
  • 1 Tbsp cornstarch
  • 1 Tbsp peanut oil, divided
  • 1 Tbsp minced fresh ginger
  • 4 ozs shiitake mushrooms, stemmed and thinly sliced
  • 1 carrot, thinly sliced diagonally
  • 12 scallions, chopped
  • 1/2 cup slivered almonds
  • 2 Tbsps oyster sauce
  • 1 tsp chili-garlic sauce
