I made a different crust and mixed an egg and shaved parmesan into the ricotta. enjoyed it together with a rocket salad - yum!

Ingredients for 4 servings

300 g of cherry tomatoes

250 g of ricotta cheese

A few sprigs of thyme

A small handful of oregano, roughly chopped

1 tablespoon of olive oil

Sea salt and ground black pepper

250 g plain flour

170 g very cold, butter (cut into small cubes)

1 teaspoon sea salt

1 egg

1 tablespoon of balsamic vinegar

30 ml ice cold water
