1 teaspoon white peppercorns

1/4 cup finely chopped fresh dill

1/4 teaspoon ground black pepper

2 large yellow onions, quartered

1 1/4 teaspoons kosher salt

Water

1 teaspoon sugar

3 stalks celery, cut into 2-inch pieces

2 bay leaves

4 large eggs

1 cup unsalted matzo meal

3 tablespoons finely chopped chives

6 tablespoons chicken fat

2 jalapeno peppers, roasted and slit

1 (3-pound) chicken

10 sprigs fresh thyme

Chopped fresh dill leaves

2 tablespoons seltzer water

3 lbs chicken bones, neck included
