  • 1 1/2-2 lbs baby or fingerling potatoes (I used a mix of blue, red and white)
  • 2 1/3 cups chicken stock
  • 1 onion, sliced
  • 4 cloves garlic, sliced
  • 3 Tbsps fresh thyme leaves
  • 1 Tbsp olive oil
  • 1 Tbsp butter
  • salt
  • pepper
