Ingredients for 6 servings

1 tsp. olive oil

1.5 lb. ground italian sausage (sweet, hot, or both) -- links are fine, just remove from casing

2 Tbsp. balsamic vinegar

2 cups chopped peppers (red, green, orange, yellow) -- whatever you have on hand will work just fine

2 medium onions, chopped

2 garlic cloves, chopped

1 can chicken broth

1 can (15 oz.) diced fire roasted tomatoes

1 tsp. dry basil

1 tsp. dry parsley
