The sauce:

1/4 cup soy sauce

2 teaspoons mirin

1 green onion, chopped

1 teaspoon Korean red chile powder (see Note)

1 teaspoon toasted sesame seeds

1 teaspoon toasted sesame oil

The rice:

2 tablespoons toasted sesame oil

4 ounces top sirloin or other lean beef, chopped into 1/2-inch pieces

2 cloves garlic, minced

1 green onion, diced small

1/2 teaspoon salt

12 ounces soybean sprouts, ends trimmed 4 cups cooked short-grain sushi or brown rice
