500 g undyed smoked haddock fillets skin off bones removed

250 g basmati rice

a small bunch of fresh coriander leaves picked stalks finely chopped

sea salt and freshly ground black pepper

1 onion peeled and finely chopped

2 fresh bay leaves

2 lemons

a knob of butter

4 large eggs preferably free range or organic

1 heaped tablespoon Madras curry paste

1 fresh red chilli deseeded and finely sliced
