Ingredients for 8 servings

2 slices bacon (optional)

olive oil

one small onion, diced

2 x garlic cloves, diced

2 tsp dried thyme

crushed red pepper

(1) can fire roasted crushed tomatoes, 28 oz.

4 cup chicken broth, plus additional to thin soup as needed

3 x ribs of celery, sliced on the bias into 1/2 inch pieces, then halved

4 large leaves of kale, stems removed, washed well and sliced into 1-inch pieces.

(1) can cannellini beans, with liquid, 15 oz.

1 cup small pasta

salt and pepper
