Momma's Lemon Rice

Feel free to adjust the amounts of ingredients depending on taste. Variation: Add raw grated mangos to create a tangy taste

Ingredients for 8 servings

2 onions, diced

3 green chilies, chopped into large chunks

Pinch of mustard seeds

Pinch of turmeric

Splash of oil

1 tsp channa daal

1 tsp urud daal

Few curry leaves

1/2 lemon (vary according to taste)

2 cups rice grains

1 cup of peanuts

Preparation

Boil the rice

Meanwhile make the lemon concentration. Firstly, heat the oil in a wide based pan

3.

Add the mustard seeds and allow them to splatter

4.

Fry the onions and chillies

5.

Add the channa daal and cook for a while. Then put the urud daal in later on otherwise it'll overcook and become too hard

6.

Add curry leaves and continue to fry until the onions are fully cooked. Then, stir the turmeric and salt and turn off the hob. Allow the concentration to continue to cook in the heat

7.

Squeeze the juice of the lemon onto the mixture

8.

Fry peanuts in a separate pan and then add to the lemon concentration

9.

Mix rice into the concentration. Keep tasting to check the strength. Add more rice to milden the strength

10.

Serve with natural yoghurt on the side
