• 2 pears, peeled, cored and sliced wafer thin
• A good handful of parmesan shavings
• 50 g of pine nuts, toasted
• 3 Tbsps of extra virgin olive oil
• 1 Tbsp of white wine vinegar
• 1 clove of garlic, minced
• A good pinch of sea salt and ground black pepper
