Great salad! I used left overs from a slow cooker BBQ chicken recipe. Made a fantastic dinner! I grilled the corn in the broiler for the first time and it was delicious.

Ingredients for 6 servings

2 tablespoons olive oil mayonnaise

1 tablespoon olive oil

2 tablespoons lemon juice

1 teaspoon smoked paprika

1/4 teaspoon sea salt

4 cups Romaine lettuce, finely chopped

2 cups leftover BBQ chicken, skin removed, finely chopped

2 tomatoes, diced

1 ear grilled corn, shaved

1 avocado, cubed

2 tablespoons feta cheese

2 tablespoons cilantro (optional)
