2/3 to 1 pound boneless pork shoulder or belly, cubed

1 yellow onion, sliced

3 tablespoons fresh ginger, thinly sliced

2 garlic cloves, peeled and lightly smashed

1 packet dashi soup granules, dissolved in 2 cups boiling water then strained

1/2 cup soy sauce, regular or light

1/2 cup mirin

1 medium sweet potato, peeled and cut into 1-inch cubes

1 1/2-2-pound Kabocha squash, peeled, seeded, cut into 1-inch cubes

1 medium daikon radish, peeled, cut into 1-inch cubes

Sliced scallions for garnish
