½ cup low-sodium soy sauce

2 cloves garlic, minced

1 inch fresh ginger, minced

1 Tbsp light brown sugar

1 Tbsp honey

2 tsp rice wine vinegar

1 lb boneless skinless chicken breasts or thighs, cut into 2-inch cubes

1 large (or 2 small) mango, peeled and diced

1 Tbsp chopped green onions (scallions)

1 Tbsp chopped fresh cilantro leaves

1 thai bird's eye chili (or jalapeno), thinly sliced (optional)
