Salt and freshly ground pepper

2 cups chicken stock or low-sodium broth

2 basil sprigs

2 small yellow squash, finely diced

2 small zucchini, finely diced

1/2 cup oil-packed sun-dried tomatoes, drained and finely chopped

1 tablespoon unsalted butter (optional)

Sherry vinegar, for garnish
