5 tbsp Olive oil (or 1 tbsp margarine)

Breadcrumbs

4 medium Eggplants, peeled and cut into 1 cm slices

3 medium Potatoes

5 medium Courgettes, cut into 1/2 cm slices

1-2 Cups Potato water

5 medium Button mushrooms, sliced

Cinnamon

1 cup Olive Oil

1/4 tsp salt

FOR THE VEGAN BECHAMEL SAUCE

1/2 Cup Blanched almonds

1 tsp Nutmeg

5 medium Potatoes, cut into 1 cm slices

2 tbsp Flour
