3 ½ ounce package shitake mushrooms, sliced

2 cloves garlic, pressed through garlic press

4 slices of provolone cheese

1 cup fresh baby spinach leaves

¼ cup sundried tomatoes packed in olive oil

4 tablespoons flat-leaf parsley, chopped, divided use

1 lemon, sliced into 4 circles for garnish

2 tablespoons toasted pine nuts
