olive oil

6 chicken thighs, or boneless skinless chicken breasts

8 ounces frozen mango chunks, defrosted and drained

1/3 cup raisins

1 shallot, thinly sliced

2 red peppers, cored and diced

4 slices fresh ginger root, thinly sliced

2 cloves garlic, crushed

1/2 teaspoon curry powder

1 teaspoon cumin

1/2 teaspoon whole cloves

3/4 cup chicken stock

1 tablespoon cider vinegar

1/4 teaspoon cayenne pepper, optional

salt and pepper

fresh cilantro leaves, to garnish (optional)
