Summertime Gingered Swordfish Ceviche

Ingredients for 10 servings

1 large swordfish steak

6  ripe plum tomatoes

1 large piece of fresh ginger

1 sweet onion

3 limes

3 lemons

3 tbsp white vinegar

4 tbsp olive oil

salt to taste

black pepper to taste

Preparation

1.

Make sure to purchase an incredibly fresh swordfish steak. Rinse fish and cut into small cubes. Chop a whole sweet onion. 3 cucumbers, and 6 ripe plum tomatoes into small cubes. Peel large piece of ginger and shave into a large bowl. Add all ingredients into the same bowl. Squeeze 3 fresh limes, 3 lemons, 3 tbsp white vinegar, and 4tbsp of olive oil into the same bowl. Kosher or Sea Salt and black pepper to taste. Mix all ingredients well. Place covered in the refrigerator for 2-3 hours until ready to serve.
