* The pickled carrots and daikon:

* 3/4 cup shredded carrot

* 3/4 cup shredded daikon

* 1/4 cup distilled white vinegar

* 1/4 cup sugar

* 1/2 teaspoon kosher salt

* The tuna:

* -- Juice of 1 lime

* 1 tablespoon soy sauce

* 2 tablespoons fish sauce

* 1 tablespoon toasted sesame oil

1 tablespoon sugar

1/4 teaspoon fresh ground black pepper

1 to 1 1/2 pounds tuna steaks

The sandwich:

1 long Italian loaf or a baguette (about 12 ounces)

1/4 cup mayonnaise

1 tablespoon soy sauce

1/2 English cucumber, peeled, halved lengthwise and cut into slices about 1/4-inch by 3 inches

1 jalapeno pepper, seeds removed and thinly sliced

3/4 cup loosely packed cilantro leaves (optional)
