I found 1tsp of crushed chilli a little overpowering without the sugar. Otherwise quick and easy to make.

Ingredients for 4 servings

1 kg (2.2 pounds) of pumpkin, peeled, de-seeded and chopped

2 tbs sunflower oil

1 brown onion, peeled and quartered

1 tsp of crushed chilli

¼ tsp cayenne pepper

1 tsp nutmeg

5 cups vegetable stock

1¼ cups rice milk

1 tsp brown sugar (optional)
