  • 1 cup grated Fontina or Swiss cheese (4 ozs)
  • 2 tsps canola oil
  • Freshly ground pepper
  • 6 ozs very thinly sliced turkey pastrami
  • 4 tsps Dijon mustard
  • Pinch of cayenne pepper
  • 2 Tbsps reduced-fat mayonnaise
  • 2 8-oz loaves "cocktail-size" pumpernickel or rye bread (about 44 slices)
  • 1 cup sauerkraut, rinsed and squeezed dry
