1 1/4 lbs cabbage

12 slices fresh ginger (thin, quarter sized)

1/3 cup thinly sliced green onion

2 lbs boneless skinless chicken breast halves

6 fresh jalapeno chilies

4 garlic cloves , peeled and chopped

8 ounces mushrooms

2 carrots

1 1/2 cups chopped fresh cilantro

3 quarts chicken broth

5 cups hot cooked rice

2 lemons , cut into wedges

2 tablespoons asian fish sauce (nam pla or nuoc mam)

1/2 cup lemon juice (approximate)

1 (14 1/2 ounce) can diced tomatoes

2 stalks fresh lemongrass (each 12 to 18 inches long)
