1 cup black-eyed peas, soaked overnight

2 tbsp. palm oil

1 medium yellow onion, finely chopped

½ Japanese eggplant, finely chopped

Kosher salt and freshly ground black pepper, to taste

12 8" x 6" squares banana leaves

⅓ cup fresh lemon juice

¼ cup canola oil

2 medium tomatoes, cored, seeded, and finely chopped

1 habañero or Scotch bonnet chile, stemmed, seeded, and minced

½ small red onion, very thinly sliced lengthwise
