Ingredients for 4 servings

1/2 cup panko

1 egg

1 can chick pea

1/2 can corn

1 green pepper

3/4 onion

3 potatoes sliced thin

seasonings to taste

1 can chickpeas

butter or cooking spray

mrs dash seasoning mix garlic and herb

1 avocado

salt

Preparation

1.

Drain, rinse & pat dry chickpeas & corn & place in food processor with egg & panko until it is near a gritty consistency

2.

Chop the onion and pepper & put into food processor. The chickpea/corn mixture should now be pulsed enough to form a patty. Sprinkle in your desired seasonings.(I used Mrs. Dash Garlic & herb.)

Make round patties & place them on a plate in the fridge for 10 minutes.

Preheat your skillet, use cooking spray or butter.

Place desired amount of patties in pan.(I managed about 5 from the mixture.)

I let the first side cook until it browns, and then flip it. I try not to flip it too much.

POTATOES - sliced thin. Preheat oven to 350

Spray pan with cooking spray

Place evenly sliced potatoes in a bowl with seasonings

10.

Melt a slice of butter, and drizzle it on the potatoes. Toss them together

11.

Place them on sheet and place them in the oven for 15-20 minutes or until browned

12.

Slice avocado, remove pit. Mash up with salt and pepper.
