1 cup corn or 1 cob of corn, roasted

1 1/2 cups cooked black beans (or one 15-ounce canned beans, rinsed and drained well

1 avocado, diced

1 scallion, minced

1/2 cup red bell pepper, diced

2 teaspoons chopped cilantro

1 teaspoon ground cumin

1 teaspoon ground coriander

1-2 teaspoons fresh jalapeno pepper, minced

juice of one lime

1 tablespoon extra virgin olive oil

salt and pepper, to taste
