250.0 g beef mince (not lean)

1.0 shallot, finely diced

1.0 tsp Worcestershire sauce

1.0 large egg, plus 1 large egg yolk

100.0 g mature cheddar, grated

1.0 tsp caster sugar

8.0 mini white snack rolls

1.0 tsp poppy or sesame seeds

olive oil, for frying

sea salt

1.0 small handful of watercress, leaves picked, stalk discarded

60.0 ml crème fraîche

a squeeze of lemon juice

0.5 small red onion, finely sliced

1.0 tbsp cider vinegar

1.0 tsp caster sugar
