4 trout fillets (7 ounces each)

Coarse salt

Freshly ground white pepper

All-purpose flour for dredging

Corn or peanut oil for frying

Green tartar sauce

Asian slaw

1/4 chopped cornichons

1 tablespoon chopped capers

1 medium shallot, coarsely chopped

2 cups mayonnaise

1/2 teaspoon Dijon mustard

1 1/2 heaping tablespoons chopped fresh dill

2 heaping tablespoons chopped fresh chives

2 heaping tablespoons chopped fresh flat-leaf parsley

1 teaspoon fresh lemon juice

1/2 teaspoon freshly ground white pepper

1/4 cup olive oil

1 pound cabbage, cored and shredded

1 cup grated carrots

1/2 cup Asian Vinaigrette

2 tablespoons chopped fresh mint

1/3 cup vegetable oil

1/3 cup fish sauce

¼ cup fresh lime juice

¼ cup rice vinegar

2 tablespoons sugar

1 tablespoon chopped garlic

1 teaspoon chopped hot pepper
