Ingredients for 4 servings

450 g of tuna tinned in olive oil

8 salted anchovies, excess salt rinsed off

20 g of black olives

4 free-range eggs, soft-boiled

200 g of salad leaves

2 heads of baby gem lettuce

1 bunch of spring onions, finely sliced

8 radishes, cut into quarters

1/2 cucumber, sliced

6 beef tomatoes

1 celery stick, sliced

180 ml of extra virgin olive oil

60 ml of balsamic vinegar

80 g of cherry tomatoes

2 garlic cloves

salt

black pepper

crusty bread
