5-6 oz whole wheat spaghetti noodles

2 cups leftover chicken, chopped

3/4 cup frozen peas, thawed

1/2 tbsp butter

1/2 tsp olive oil

8 oz button mushrooms, sliced

1 x shallot, sliced

2 x cloves of garlic, minced

1 12 oz low fat evaporated milk

3-4 tbsp Parmesan cheese, shredded

1/4 tsp fresh nutmeg, grated

Sea salt and freshly cracked pepper, to taste

2-3 tsp cornstarch

2 tbsp fresh parsley, chopped

3-4 tbsp Italian flavored panko crumbs
