1 serrano chili -- chopped finely

1/2 cup flour, for dredging

1 lime (juiced)

1 hothouse cucumber peeled and sliced into 1/2-inch thick sticks

2 large ripe mangos -- peeled

2 cups fresh bean sprouts

2 eggs, whisked

kosher salst and freshly ground black pepper

1 tablespoon sugar

1 1/2 cups panko breadcrumbs (or any non-seasoned breadcrumbs)

extra-virgin olive oil

4 tablespoons chopped fresh cilantro

1 head of Bibb lettuce cups -- ribs removed

1/2 bunch fresh mint leaves

kosher salt
