1 x shallot, finely chopped

1/3 x clove grated or pressed garlic

1 tbsp lemon juice

1/3 tsp lemon zest

1 tbsp white wine or champagne vinegar

4 tbsp olive oil

4-6 tbsp crumbled Roquefort cheese

2 tbsp buttermilk (preferably full fat)

1 tsp dijon mustard OR Colmans mustard powder

1 tbsp mayonnaise (optional)

big pinch salt

pepper to taste

handful of parsley, roughly chopped.

crispy bacon (optional topping)
