1 butternut squash

4 tablespoons extra virgin olive oil

1 1/2 cups pecan halves

1 egg white

1/2 teaspoon chimayo chile powder or cayenne powder or to taste

1 teaspoon sugar

2 bunches kale

1 small red onion, finely diced

2-4 tablespoons aged balsamic vinegar

salt and pepper to taste
