Ingredients for 6 servings

2 14oz can chickpeas, drained

1 fat carrot, peeled and thickly sliced

8 cup rich chicken or vegetable stock

1 lb pumpkin or butternut squash, peeled and cut into 1-inch (2.5-cm) chunks

10 oz green beans, trimmed and cut into 1-inch (2.5-cm) lengths

2.5 medium slightly underripe pears, peeled, cored and cut into 1-inch (2.5-cm) chunks

1/2 tsp coarse salt and freshly ground pepper

3 tbsp Olive Oil

3 large garlic cloves, chopped

1 handfull Blanched Almonds

1 medium onion, chopped

1 tsp sweet paprika (not smoked)

2 medium ripe tomatoes, finely chopped

1/3 tsp Saffron

2 tsp red wine vinegar, or more to taste

2 tsp silvered fresh Mint
