1 x leek, white part only, chopped

2 twigs thyme

1 tsp ground coriander

2 x garlic cloves, peeled and minced

1 tbsp sun dried tomato paste

1 x tomato, peeled, cored, seeded and diced

1 large sweet potato, peeled and diced

1 x parsnip, peeled and diced

2 small turnips, peeled and diced

2 x carrots, peeled and diced

14 oz (400 g) peeled and diced red kuri squash (or butternut squash)

1 x bay leaf

1 tbsp light Muscovado sugar

5 cup cold water

Crème fraiche (optional)

1/2 cup finely diced red kuri squash

Crumbles of soft goat cheese

Fresh parsley, chopped finely

White truffle oil, to drizzle
