1/4 cup red wine vinegar, or to taste

1 tbsp dijon mustard

1 clove garlic, minced

3/4 tsp salt, or to taste

1/3 tsp freshly-ground black pepper to taste

3 oz sheep

1/2 cup toasted walnuts, coarsely chopped (toasted almonds or hazelnuts are also great)

leaves from a couple sprigs fresh thyme
