100 ml good quality olive oil

1 lemon to serve

Greek extra virgin olive oil

juice of 1 lemon

800 g leg of pork shin

a pinch of sea salt

1 teaspoons red

a pinch of freshly

4 sprigs of fresh mint

wine vinegar

1 tablespoon dried oregano

a small bunch of fresh dill

ground black pepper

leaves picked

8 flatbreads to serve

quality you can afford

For the tzatziki

cut into 2cmchunks

peeled and finely grated

a mixture of colours is nice

1 small clove of garlic peeled

200 ml natural yoghurt

red wine vinegar

1 tablespoon red

1 tablespoon dried mint

For the kebabs

if you can get it the best

2 cloves of garlic

chopped stalks and all

a large cucumber

3 sweet pointed peppers

1 heaped teaspoon dried mint
