The Croquettes:

1 1/2 cups minced Braised Beef (see recipe in article link)

1 3/4 cup homemade breadcrumbs, fresh or dried

3 tablespoons to 1/4 cup reserved juices from braised beef

1 egg, beaten

3 tablespoons extra virgin olive oil for frying

The Garnish:

9 cornichons, minced

1 teaspoon cornichon brine

3 teaspoons capers

2 teaspoons minced fresh tarragon

3 teaspoons minced chives
