some very coarse salt and pepper (to taste)

1 onion, chopped

1 leafy green fennel stalk (for flavoring)

6 Yukon Gold potatoes (or similar weight in banana fingerlings or whatever variety you prefer), diced into large cubes

2 tbsp aged balsamic vinegar

3 tbsp olive oil

2 carrots, scrubbed but not peeled, diced into chunky batons

1 head of garlic, broken up and unpeeled
