750 g oxtail, cut in pieces

300 g whole onions

2 large cloves of garlic

50 g Demerara sugar

200 ml white whine

salt and pepper

20 g unsalted butter

100 g sliced onions

2 cloves

1 bay leaf

150 g Maris piper potatoes, peeled and cut in 2cm dice

450 g cooking liquid from the oxtail

Cooled flaked oxtail meat
