Ingredients for 4 servings

4 chicken breasts, I used Just Bare Chicken

4 tablespoons of olive oil, divided in half

1 shallot or 1/2 of onion diced, divided in half

1 cup of Israeli Couscous

2 tsp chicken bouillon, I used Shirley J

2 cups of water

1/2 cup of slow roasted or sun dried tomatoes, store bought or homemade

1 bunch of swiss chard, washed

2 garlic cloves, minced

a big squeeze of lemon juice

salt and pepper
