Ingredients for 4 servings

Cheddar Biscuit Crusts

2 large, split chicken breasts (about 1 ½ – 2 lbs), bone-in and skin on

Olive oil

Salt

Freshly cracked black pepper

1 – 1 ¼ lbs tomatillos, husks and stems removed, and quartered

1 onion, coarsely chopped

1 jalapeno, halved and seeded

1 chili verde pepper (Hungarian, Banana or Anaheim pepper), halved, seeded, and coarsely chopped

2 whole cloves garlic, papers removed

½ cup, loosely packed, fresh cilantro leaves

1 tablespoon honey

4 tablespoons butter

8 tablespoons flour

2 cups chicken stock, hot

2 cups white corn kernels (frozen and thawed)

2 tablespoons buttermilk, to brush onto crusts

½ cup grated sharp white cheddar cheese, for garnish
