Ingredients for 4 servings

200 g of un-dyed smoked haddock fillet, skinned and pin-boned

150 ml of double cream

175 g of Arborio risotto rice

100 ml of white wine

50 g of onion, finely chopped

1 tbsp of olive oil

600 ml of fish stock

50 g of grated Parmesan

125 ml of double cream

25 g of grain mustard

salt

pepper

4 eggs

1 dash of white wine vinegar

1 handful of rocket

60 g of sun-dried tomatoes

2 tbsp of chervil, picked

1 handful of Parmesan shavings
