2 cups diced yellow onion (about 1 large onion)

3 large carrots, peeled and diced

3 celery ribs, diced

2 tablespoons minced ginger

2 tablespoons minced garlic

1 tablespoon red curry paste

1 tablespoon salt

Pinch sugar

¼ cup white wine

⅓ cup flour

6 cups fish stock or water

4 medium potatoes, peeled and diced

1 pound rockfish, cut into dime-sized chunks (or any fish really, salmon works great!)

12 ounces coconut milk

Juice of ½ lime

Cilantro or scallion for garnish
